Banana 'Ice Cream' (Vegan, GF)

Yields: 
2 people

Ingredients: 

2 frozen bananas, peeled and chopped

1/2 cup coconut milk (or milk of choice)

5 drops vanilla extract

1 heaping teaspoon peanut butter (optional, any other nut butter works too)

Toppings of choice: chocolate chips, nuts, coconut flakes, chia, flax, sprinkles, berries, etc.

Directions: 

Freeze bananas in a Ziploc bag for at least 5 hours, but preferably overnight.

Take bananas out of freezer and drop into blender. Add milk, vanilla and nut butter if using.

Blend just until a creamy, smooth consistency forms. (You might have to stop and scrape sides of blender a couple times.)

Spoon into one or two bowls and add your toppings. Enjoy!
