Black Bean Brownies (Vegan, GF)

Yields: 
8 people

Ingredients: 

2 cups black beans, cooked and rinsed

2/3 cup Sucanat (or sugar of choice)

1/3 cup cocoa powder

2 Tablespoons coconut oil, melted

3 eggs (or 3 Tablespoons of flax + 3 Tablespoons water)

1 1/2 Tablespoons vanilla

1/4 teaspoon sea salt

Handful of walnuts (optional)

Handful of chocolate chips (optional)

Directions: 

In a large bowl, combine all of the ingredients except walnuts and chocolate chips.

Mix with a spoon and then transfer to a blender or food processor until black beans are smooth and blended.

Pour mixture into a greased 8 x 8 pan. Top with walnuts and chocolate chips, if using.

Bake at 350 degrees for 15 minutes. (I used the flax instead of the eggs, so mine took another 5-7 minutes to harden.)

Allow to cool for 10 minutes. Enjoy!

Notes: 

If they still seem runny when done, keep them in the oven for another five minutes. They do harden up once they cool, however!
