Handful of dark romaine leaves, chopped (or greens of your choice)
1 medium tomato, chopped
2 Tablespoons chopped green onion
1 corn on the cob, cooked and cut off cob
1/4 cup black beans, cooked
1/3 avocado, chopped
2 Tablespoons olive oil
1 Tablespoon apple cider vinegar
Mix up all of the chopped vegetables on a plate or in a bowl. Drizzle olive oil and vinegar over the salad (add more if desired). Sprinkle garlic powder on top.
These measurements are just an example of what you can use, but the amounts are completely up to you. I tend to make massive salads. Just use whatever looks good on your plate!
