Cauliflower Rice (Vegan, GF)

Yields: 
4 people

Ingredients: 

1 head cauliflower, cut into florets

Directions: 

Bring a pot of salted water to boil.

Add cauliflower and cook until tender, about 10 minutes.

Drain and allow cauliflower to slightly cool.

Drop cooked florets into a food processor and chop until fine but not smooth. (You can also do this in a blender.)

Notes: 

Use as the base for a rice dish or stir fry. I added a chicken breast with steamed green beans, carrots, mushrooms, cherry tomatoes, garlic and onion. Another time, I used sunflower seeds in place of chicken. For the sauce, I combined sesame oil with umeboshi vinegar, turmeric, sea salt and black pepper. Experiment!
