Chocolate Chunk Walnut Cookies (Vegan)

Ingredients: 

2 cups whole grain spelt flour (or flour of choice)

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon sea salt

1 cup pure maple syrup

2 teaspoons vanilla extract

1/2 cup coconut oil

1 3.5-ounce bar of dark chocolate, chopped into small pieces

2/3 cup walnuts, chopped or grinded in food processor

Directions: 

Preheat the oven to 350 degrees.

Mix together the dry ingredients in one bowl and the wet ingredients in another. Then add the wet ingredients to the dry and mix until just combined.

Add the dark chocolate chunks and chopped walnuts and mix.

Place spoonfuls of batter on cookie sheets and bake for 12 to 15 minutes.

Notes: 

If your coconut oil is hard, feel free to soften it first, like butter.

You can have the walnuts chopped in chunks or grinded up in a food processor. I like mine grinded very fine, almost like flour.
