Lamb Squash Salad (GF)

Yields: 
1 people

Ingredients: 

Handful of organic spring mix (or lettuce/greens of choice)

1/4 cup onions, chopped

1 garlic clove, chopped

1/4 cup beets, sliced

2 Tablespoons gorgonzola cheese (or cheese of choice)

1/4 cup cucumber, sliced

1/2 cup leftover lamb roast, cut into pieces (or protein of choice)

2 Tablespoons butternut squash oil (or olive oil)

2 Tablespoons balsamic vinegar

Directions: 

Mix all ingredients in a bowl or on a plate. Stir the oil and vinegar together in a separate bowl, then drizzle on top of salad.
