2 organic chicken breasts
1 cup uncooked brown rice pasta
1 serving pesto (recipe link below)
1-2 fresh garden tomatoes
Cook pasta according to directions on package. Wash and drain.
Cook chicken breasts, then chop into strips or bite-size pieces.
Make pesto in food processor or blender (you can do this ahead of time if you prefer)
Stir chicken, pasta and pesto together in a large bowl
Separate into 2-3 servings on separate plates.
Chop fresh tomatoes and add to pasta plates. Enjoy!
