Raw Apple Pie (Vegan, GF)

Ingredients: 

Crust:

2 cups nuts of choice (I used walnuts and almonds)
1/2 cup dates, pitted
3/4 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
Dash sea salt

Filling:

6 cups peeled, chopped apples
Juice from 1/2 a lemon (or 1 Tablespoon lemon juice)
1 cup dates, pitted, soaked and drained (soak in warm water for at least an hour)
2 heaping teaspoons cinnamon
1/8 teaspoon cloves
1/8 teaspoon nutmeg

Directions: 

Crust:

In a food processor or blender, chop nuts until fine. Then add dates, salt and spices, and blend until a soft, dough-like consistency forms. Scoop into a 9-inch pie plate and press down until an even pie crust forms.

Filling:

Combine 2 cups of apples in your blender or food processor, along with the rest of the ingredients. Keep 4 cups of apples aside.

Blend ingredients well, until it resembles smooth applesauce.

Pour mixture over the rest of the apples and mix well.

Pour into the pie crust. Let sit for a couple hours in the refrigerator, to harden and thicken.
