Raw Cashew Cheese (Vegan, GF)

Yields:

Ingredients: 

1 1/2 cups raw cashews (soak for 1-2 hours, drain and rinse)

2 cloves garlic

1/4 cup water

2 Tablespoons lemon juice

1/2 teaspoon sea salt

Directions: 

Place all ingredients in food processor or blender until very creamy. Stop and scrape the walls a few times to make sure all of the cashews are broken down.

Use as a dip for raw vegetables or crackers, or use in place of cheese in a recipe, such as in lasagna, pizza, nachos, on a sandwich, or anything else you prefer. Enjoy!
