Handful uncooked spaghetti noodles (I used 7 whole-grain flax noodles)
2 cups fresh spinach
1 cup chopped mushrooms
1 garlic clove, chopped (or garlic powder)
1/2 Tablespoon oregano
1/2 Tablespoon basil
Handful mozzarella cheese (optional)
1 Tablespoon extra-virgin olive oil
1 Tablespoon balsamic vinegar.
Fill a pot half to three-fourths full of water and allow to boil. Once boiling, snap the pasta noodles in half and drop them into the boiling water. Continue to allow the water to boil and follow directions on your pasta noodle box for how long to cook them. (For me, it was four minutes.)
In the last minute, drop the spinach, mushrooms and garlic clove into the pot. Continue to allow to boil.
When time is up, pour everything into a strainer. (Read your box to see if you should rinse noodles.)
Drop onto a plate. Sprinkle oregano and basil on top, and garlic power and mozzarella cheese if using. Drizzle olive oil and balsamic vinegar over everything. Stir around on plate with a fork and enjoy!
