1 sweet potato
1 red onion
2 gloves garlic
1 Tablespoon extra-virgin olive oil
1 teaspoon cumin
1 teaspoon chili pepper
1 (15 oz) can black beans, drained and rinsed
1 Tablespoon lime juice (or juice of one lime)
Salt and pepper to taste
2 Tablespoons fresh cilantro, chopped (optional)
1/2 avocado, sliced (optional)
Cut the sweet potato into chunks and place it in your food processor to chop up. Once chopped, scoop into a large pan.
Chop onion and garlic cloves in food processor and scoop into pan with sweet potato.
Pour olive oil into pan and sauté sweet potato, onion, garlic and spices on medium heat until sweet potato is tender, about 7 minutes. Stir frequently to prevent burning/sticking.
Add black beans, lime juice and salt and pepper and stir. Cook until beans are heated.
Scoop into individual serving bowls and garnish with fresh cilantro and avocado.
