2 garlic cloves, chopped
1/4 cup red onion, chopped
1-2 carrots, chopped
1/2 cup broccoli florets, chopped
15 cherry tomatoes
5 white mushrooms, chopped
1 cup cooked lentils
1 1/2 cups vegetable broth
1/8 teaspoon cumin
1/8 teaspoon cayenne pepper
1/8 teaspoon chili pepper
1/8 teaspoon sea salt
Steam garlic, onion, carrots, broccoli, tomatoes and mushrooms in a steamer basket for 10-15 minutes, or until soft. (If you don’t have a steamer basket, you can also boil or sauté them.)
Pour the cooked vegetables into a pot and add the lentils, vegetable broth and spices. Stir until thoroughly mixed together.
Cover and simmer for 20-25 minutes.
You can substitute any of these vegetables for vegetables that you have on hand.
