Zesty Spring Salad (Vegan, GF)

Yields: 
1 people

Ingredients: 

1/2 cup spring mix (or greens of choice)

1 full stalk mustard greens, chopped

6 cherry tomatoes

6 slices cucumber

1-2 radishes, sliced

1/4 avocado, diced

Handful fresh cilantro, chopped

1 garlic clove, chopped

1/8 cup red onion, chopped

1/4 cooked black beans

2 Tablespoons sunflower seeds

1Tablespoon olive oil

1 1/2 Tablespoons apple cider vinegar

Sea salt and black pepper to taste

Directions: 

Mix all vegetables on a plate or bowl. Drizzle olive oil and vinegar on top, and sprinkle with salt and pepper. Enjoy!
