1/3 pound ground beef (preferably grass-fed)
2 collard green leaves (or greens/lettuce of your choice)
1/2 avocado
1 tomato
Handful shredded cheddar cheese
4 corn tortillas (I like the ones from Whole Foods with only three ingredients)
4 lime wedges
Spices: cumin, cayenne pepper, garlic powder, sea salt, chili powder (or taco seasoning packet)
Crumble ground beef into a pan at medium heat. Cook, moving meat around every minute or so with a spatula. Continue until beef is browned and thoroughly cooked through.
Sprinkle each of the spices onto the meat, moving it around with a spatula until evenly distributed.
Chop collard leaves, tomato and avocado. Set aside.
Place corn tortillas on a plate in between two damp paper towels. Microwave for 30 seconds or until just warm.
For each tortilla, spoon on some beef, avocado, tomato, collards and cheese. Take a lime wedge and squeeze on top of the finished product.
