Beet Carrot Apple Soup Recipe – Vegan, Gluten Free

1 small beet, raw or cooked, sliced
1 large carrot or 2 small carrots, sliced
1/2-1 apple, sliced
1 teaspoon fresh or powdered ginger
1 Tablespoon coconut oil
1 Tablespoon chia seeds
1 Tablespoon protein powder (optional)
1/2 cup coconut water
1/2 cup milk (your choice what kind)

Place all ingredients in blender or food processor and blend until combined and creamy.
Pour the concoction into a pot on the stove and simmer until warm.
