3-4 collard greens or romaine leaves
1 Tablespoon lime juice
1/2 – 1 cup chicken, shredded
5 cherry tomatoes
5 slices cucumber, chopped
2 button mushrooms, chopped
1/8 cup red onion, chopped
1 garlic clove, chopped
Salt and pepper to taste
Peel avocado, remove seed and mash with a fork. (I used about 2/3 of an avocado, use your best judgment!)
Add lime juice to mashed avocado and stir.
Add chicken and vegetables of choice (any combo works!) and stir.
Scoop mixture onto greens and wrap or eat as is. Enjoy!
