Greek Quinoa Salad (GF)

1 1/2 cups quinoa

3 cups water (or vegetable broth)

2 cloves garlic, minced

1 red onion, diced

1 cup cherry tomatoes, sliced in half

1/2 cup black olives

1/2 cup artichokes

1/2 cup packed spinach leaves, chopped

Juice from one lemon (or 1 1/2 Tablespoons lemon juice)

3 Tablespoons olive oil

1/4 cup apple cider vinegar

Salt and pepper to taste

1/2 cup crumbled feta cheese


In a medium-large saucepan, cook the quinoa in water or vegetable broth by bringing the water to a boil and then covering simmering it for 15 minutes.

Allow to cool in a separate container.

Gently toss the quinoa together with all remaining ingredients. Carefully add the feta cheese last.


Add more or less olive oil and apple cider vinegar until you get your desired amount of dressing.

Remove feta cheese for a vegan option.
