1 1/2 cups quinoa
3 cups water (or vegetable broth)
2 cloves garlic, minced
1 red onion, diced
1 cup cherry tomatoes, sliced in half
1/2 cup black olives
1/2 cup artichokes
1/2 cup packed spinach leaves, chopped
Juice from one lemon (or 1 1/2 Tablespoons lemon juice)
3 Tablespoons olive oil
1/4 cup apple cider vinegar
Salt and pepper to taste
1/2 cup crumbled feta cheese
In a medium-large saucepan, cook the quinoa in water or vegetable broth by bringing the water to a boil and then covering simmering it for 15 minutes.
Allow to cool in a separate container.
Gently toss the quinoa together with all remaining ingredients. Carefully add the feta cheese last.
