Pumpkin Curry Soup (Vegan, GF)

Ingredients: 

1/4 cup onion, chopped

1 garlic clove, minced

2 Tablespoons olive oil

1 cup pureed pumpkin

2 cups vegetable stock

1 bay leaf

1/2 teaspoon curry powder

1/4 teaspoon nutmeg

1/4 teaspoon black pepper

1 cup coconut milk

Directions: 

Sauté onion and garlic in the bottom of a pot with olive oil until onion is translucent.

Add pumpkin, vegetable stock, bay leaf, curry and nutmeg, and bring to a boil. Lower heat and simmer for 30 minutes.

Remove the bay leaf, add coconut milk and wait until soup is reheated.

Pour into bowls and enjoy!
