Raw Strawberry Cream Pie (Vegan, GF)

Crust Ingredients:

1/2 cup almonds
1/2 cup walnuts
1 cup unsweetened shredded coconut
1 cup dates, chopped and pitted
2 Tablespoons melted coconut oil
Pinch of sea salt

Strawberry Filling Ingredients:

2 cups unsweetened shredded coconut
2 cups frozen strawberries
1/4 cup pure maple syrup
2 Tablespoons coconut oil


Crust Directions:

Place all ingredients except dates in a food processor and chop into small pieces.

Slowly add some dates, blend, then add some more, and keep blending until mix starts sticking together.

Pour mix into an 8-inch pie pan and flatten with hands until it’s evenly distributed.

Store in refrigerator while making strawberry filling.


Strawberry Filling Directions:

Place all ingredients in food processor and blend until smooth. Keep scraping down the bowl to get consistency.

Pour filling into pie crust. Refrigerate for at least two hours before eating.
