Smoked Herring (Salad) (GF)

Ingredients: 

2 handfuls spring mix or romaine

1 tomato, sliced

Handful of cucumber slices

1-2 beets, cooked and sliced

1 radish, sliced

1/3 avocado, chopped

Spices of your choosing

1/2 cup smoked herring

1 Tablespoon olive oil

1 Tablespoon balsamic vinegar

Directions: 

Mix the vegetables, herring and spices on a plate. Drizzle the olive oil and balsamic vinegar on top. Use more if desired. Enjoy!
